Cynara scolymus is a vivacious plant, probably originating from the Mediterranean. It was considered a rare vegetable over a long period of time, but is today abundantly cultivated in mild winter Atlantic regions.1 The artichoke is not only an edible plant recommended for diabetics, but also an important medicinal plant named by Arab physicians as al-kharsaf. The generic name Cynara comes from the Latin canina, which refers to the similarity of the spines which cover it with dog's teeth.2
For therapeutic use, the leaves should be picked before flowering occurs.3
